Kokoretsi (Greece)

Image
Kokoretsi is a traditional Greek dish consisting of lamb or goat offal cut into small pieces and seasoned with lemon juice, olive oil, salt and pepper. The offal is then skewered, coated with charcoal to hold the pieces in place, and cooked over charcoal. It is traditionally consumed as an appetizer or starter on Easter Sunday in Greece. Although associated with Easter, it can often be found throughout the country throughout the year. Kokoretsi is also popular in the Balkans, and the name of the dish comes from the Albanian word kukurec, meaning tripe. An internationally popular dish, kokoretsi is sometimes served as a sandwich on a flatbread with lots of spices and tomatoes added to it, while some consume it in a baguette with pickles and bell peppers. Chalupa - Crunchy Tortilla (Mexico)

Image
Chalupa is a thin, crunchy tortilla that resembles a canoe or a cup. The shape is obtained by compressing and baking masa dough, which is then filled with a multitude of savory ingredients such as braised pork, ground beef, minced chicken, various cheeses, potatoes, and red or green chili sauce. The dish is also popular in the United States, but the American version looks more like a taco than a boat. Although the first written record of chalupa dates back to 1895 in Mexico, the dish is believed to have originated in pre-colonial times. Today, there are other types of dishes, such as sop and garnacha, that are similar to chalupa but milder. The dish is usually served hot, as a starter or main course, and when served at parties it is traditionally cut and served with coffee. ENJOY YOUR MEAL
