Kokoretsi (Greece)
Kokoretsi is a traditional Greek dish consisting of lamb or goat offal cut into small pieces and seasoned with lemon juice, olive oil, salt and pepper. The offal is then skewered, coated with charcoal to hold the pieces in place, and cooked over charcoal.
It is traditionally consumed as an appetizer or starter on Easter Sunday in Greece. Although associated with Easter, it can often be found throughout the country throughout the year. Kokoretsi is also popular in the Balkans, and the name of the dish comes from the Albanian word kukurec, meaning tripe.
An internationally popular dish, kokoretsi is sometimes served as a sandwich on a flatbread with lots of spices and tomatoes added to it, while some consume it in a baguette with pickles and bell peppers.
