Chilera (Costa Rica)

 



Chilera is perhaps the only dish that appears at a Costa Rican table more often than the popular salsa Lizano. It is a dish made with pickled vegetables such as carrots, hot peppers, onions, cauliflower and green beans in banana vinegar.

It can be used as a sauce for vegetables or as a delicious seasoning to accompany various main dishes. Chilera is typically placed in glass jars on restaurant tables across the country.
