Vegan Quinoa Rice



  • 4 tablespoons of quinoa
  • 3/4 cup of water
  • half an onion
  • 1 clove of garlic
  • 1 tablespoon of avocado oil
  • 3 tablespoons of homemade tomato sauce
  • 3/4 cup of water
  • Cherry tomato, capia pepper, green pepper, carrot, roasted eggplant
  • Salt, pepper, any seasonings of your choice

Put the quinoa in a cooking pot and boil it by adding water.
Set the cooked quinoa aside.
In another small cooking pot, caramelize the onions and garlic in olive oil.
Then add tomato sauce, vegetables and spices.
Add the last cooked quinoa and mix the rice a little, then turn off the heat and let it brew.
