Pečená Kachna (Czech Republic)


In Czechia, roast duck is known as pečená kachna. Duck is usually flavored with cumin seeds and marjoram, then slow-roasted in the oven until golden brown and crispy. It is traditionally served with potatoes, bread dumplings, fried red cabbage, and the occasional thick gravy made with reserved duck fat and flour.
