Salmon with Coriander Sauce




  • 2 pieces of salmon fillet
for the sauce
  • 5-6 sprigs of fresh coriander
  • 2 cloves of garlic
  • 2 parts pickled jalapeno peppers
  • 1 teaspoon of olive oil
  • Grated rind and juice of 1 lime
  • Salt
  • Black pepper

For the sauce, mix finely chopped fresh coriander, crushed garlic, diced jalapeno pepper pickles in a mixing bowl.
Add olive oil, lime juice and grated rind and season with salt and pepper.
Place the salmon fillets on a baking tray lined with greaseproof paper.
Pour the sauce over them and cover the fish with oiled aluminum foil. Bake in a preheated 200 degree oven for 30-35 minutes.
