Lechon Sauce (Philippines)


Lechon sauce or sarsa ng lechon is a traditional Philippine sauce that accompanies lechon braised pork. The sauce is made with a combination of pork liver, vinegar, sugar, breadcrumbs, onions, garlic, and spices (salt and pepper).

The combination is simmered until the sauce has a thick consistency as desired. This dipping sauce can be served hot straight from the pan or chilled before serving, depending on personal preference.
