Kohada Nigiri Sushi (Japan)

Kohada nigiri sushi is a traditional Japanese type of nigiri sushi. Hand-pressed sushi rice topped with slices of kohada or shad consists of a silver-skinned fish that is inexpensive and often used for sushi. Fish is typically salted and marinated with vinegar, which brings out their umami flavor.

A shad that reaches about 2,75 to 393 inches in length is called a kohada. Shinko denotes the small shad, while nakazumi denotes the fully grown shad. It is recommended to prepare the kohada nigiri sushi from November to January, when the fish gets a little oilier.

Before serving, kohada nigiri sushi is usually topped with oboro (shrimp paste).
