Curry (India-Thailand)

The term curry comes from the Tamil word kari (sauce) and refers to a variety of dishes prepared in a thin, soup-like spicy sauce. Curry can mean two things: a casserole of curry-spiced meat, fish, or vegetables traditionally served with rice, bread, or cornmeal, or a dish flavored with curry powder or curry paste.

Although curry originated in the Indian subcontinent, today it is a global dish served in Thailand, Japan, Indonesia, Malaysia, South Africa, Mauritius, Singapore, Germany, the United Kingdom and the United States. There is a wide variety of curries, as they are prepared all over the world. Creamy Ceylon curry made with coconut milk. Hot and spicy pork curry called Vindaloo. Rogan josh, a Persian curry made with meat marinated in yogurt. A stir-fried curry with precooked meat, onions and tomatoes called Jalfrezi. Known as the most spicy curry dish, the English phall made using eight chili peppers and the list goes on.

In addition to being one of the most internationally acclaimed dishes, curry is extremely healthy because turmeric, the main ingredient in curry, plays an important role in the prevention and reduction of various diseases such as arthritis, cancer, diabetes, heart disease, psoriasis and Alzheimer's.

Differences Between Indian Curries and Thai Curries

Indian Curries

The velvety texture of Indian curries comes from longer cooking times. The ingredient list often contains many dry spices that mix together and give extremely satisfying flavors. You can control the spice level by using more or less pepper, the type of chili powder you use, and leaving or cutting off the seeds and veins of the pepper (which contains the seeds and veins the most).

Main Features of Indian Curries:

  • Dry spices (coriander, turmeric, cumin, cardamom, black mustard, dried pepper, etc.)
  • It's more like a stew than a soup
  • boiled longer
  • Usually served with basmati rice

Thai Curries

Thai curries have a brighter flavor and a more soupy consistency because they use a lot of fresh herbs and take less time to cook than Indian curries. It's worth your time to stock up on some of the unique ingredients. You can freeze herbs such as lemongrass and lime leaves for multiple uses in the future.

Main Features of Thai Curries:

  • Fresh herbs and peppers (lemongrass, galangal, garlic, shallots, lime leaves, coriander sprigs, etc.)
  • More like soup than stew (usually made with coconut milk or other creamy liquids)
  • Shorter cooking time
