Salmorglio Sauce (ITALY)


Salmorglio is a traditional Italian sauce originating from Sicily. It is made with a mixture of olive oil, lemon juice, parsley, thyme, salt and pepper. A pinch of Tabasco or chopped garlic can also be added to the sauce for extra flavor. To prepare Salmoriglio, oil, lemon juice, thyme and parsley are beaten together, then mixed with a little hot water until the sauce is smooth.

It is seasoned with salt and pepper, then heated over hot water. The sauce is usually poured over slices of fried lamb, chicken, or beef, but is also used with boiled fish (especially swordfish), seafood, and vegetables such as green beans and broccoli.
