Afritada (Philippines)


  • Chicken (cut into pieces): 1,1 lbs
  • Large onion: 1 piece (chopped)
  • Garlic: 3-4 cloves (crushed)
  • Red pepper: 1 piece (chopped)
  • Tomato paste: 2 tablespoons
  • Large size tomatoes: 2 pieces (chopped)
  • Potatoes: 2 pieces (diced)
  • Carrot: 1 piece (thinly sliced)
  • Peas: 0,22 lbs
  • Water: 2 cups
  • Soy sauce: 2 tablespoons
  • Salt: 1 teaspoon (or to your taste)
  • Black pepper: 1 teaspoon
  • Cooking oil: 2 tablespoons
  • Bay leaves: 2 pieces (optional)


Heat cooking oil in a large pot over medium heat. Add chopped onion and crushed garlic, fry until pink.

Add the chicken pieces and fry until golden on all sides.

Add tomatoes, red pepper and tomato paste. Mix all the ingredients and fry for another 2-3 minutes.

Add soy sauce, salt, pepper and bay leaf. Then add water and mix.

Add potatoes, carrots and peas to the pot. Cover the pot and cook the dish over medium heat for 20-25 minutes until the vegetables soften.

Once the vegetables are soft and the chicken is fully cooked, remove it from the heat.
