Risotto al Cavolfiore (ITALY)


Risotto al cavolfiore is a traditional Italian risotto made with cauliflower as the main ingredient. Other ingredients include risotto rice such as carnaroli or arborio, chicken or vegetable broth, white wine, garlic, parsley, butter, olive oil, salt, pepper, and grated cheese.

The cauliflower is briefly roasted, cooked in broth, then mashed, which is added to risotto while it cooks. Once made, the dish is usually served with grated Parmigiano-Reggiano cheese. For an even nicer touch, the risotto can be topped with crunchy pieces of pancetta.
