Bicol Express (Philippines)

  • 1,1 lbs pork (chopped)
  • 4 hot peppers (siling labuyo or other types of hot peppers, you can adjust the amount if you wish)
  • 1 large onion (chopped)
  • 4 cloves of garlic (crushed)
  • 1 can coconut milk
  • 2 tablespoons of oil
  • Salt (to taste)
  • Black pepper (for taste)


Heat the oil in a large skillet. Add the chopped onion and fry until translucent.

Add the garlic and continue sauteing until fragrant.

Add the diced pork to the pan and saute until the meat is brown.

Add the hot peppers and fry for a few more minutes, stirring. Be careful to avoid burning the hot peppers.

Add the coconut milk. Stir and cook until the mixture boils. After boiling, reduce the heat and cook the food on medium heat for about 15-20 minutes, stirring until the meat is tender.

Season with salt and pepper. You can make adjustments according to your taste.

Serve Bicol Express hot. You can serve it with white rice or spicy rice (sinangag).
