T-BONE STEAK (NYC)



T-bone steak is a special cut of beef obtained from the front of the beef carcass. This cut is called a "T-bone" because of its bone shape. T-bone steak includes two different cuts of meat known as fillet and ribeye (New York strip). These two cuts are separated by a “T” shaped bone in the middle.

T-bone steak is usually grilled and contains bits of bone and fat that enhance the flavor of the meat. Due to the thickness and bone structure of a T-bone steak, care must be taken to cook it properly. It is usually cooked over high heat to achieve a good sear on the outside and to the desired temperature on the inside, followed by longer cooking at low heat.
