Cochinita Pibil (MEXICO)



Cochinita pibil is a Mexican pork dish originating from the Yucatan. The pork is marinated in a mixture of annatto paste, bitter orange juice and garlic. It is cooked slowly and shredded and served in tortillas, tacos, or alone with shallots, pickles, salsa, and a variety of roasted vegetables.

Cochinita pibil is characterized by the red color of the flesh imparted by marinated annatto seeds. Originally, pork was wrapped in banana leaves before cooking, but today a foil or any other suitable wrapping can be used instead. Since cochinita pig and pibil mean buried or underground, the original recipe describes using a whole suckling pig buried in a pit for frying.

This Mayan-influenced dish is served in most Mexican homes, often on weekends as a Sunday family ritual.
