Pecan-Crusted Fish
- 4 fillets of fish (e.g. sea bass, salmon or trout)
- 1/2 cup chopped walnuts
- 1/4 cup flour
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 spoonful butter
- 1/4 cup olive oil
- Salt and pepper
Preheat the oven to 392 degrees.
In a mixing bowl, mix walnuts, flour, breadcrumbs, Parmesan cheese, salt and pepper.
Season the fish fillets with salt and pepper on both sides.
Dip into the walnut mixture to cover each fish fillet in the mixture.
Melt the butter and olive oil in a skillet over medium heat.
Cook the fish fillets in the pan for 3-4 minutes until browned on both sides.
Transfer the fish to a baking sheet and bake in the oven for 10-15 minutes.
Serve hot when the fish is cooked. You can serve it with vegetables, if desired.
