Orange Carrot Soup (FRANCE)



  • 1 tablespoon of butter
  • 1 tablespoon of olive oil
  • 1 onion
  • 1 medium potato
  • 2 slices of root celery
  • 4 medium carrots
  • 1 celery stalk
  • 7 glasses of water
  • 1 glass of freshly squeezed orange juice
  • 3 slices of orange
  • 2 – 3 celery leaves
  • Salt
  • Black pepper

Chop the onion, carrot, potato, celery root and celery stalk into large cubes.

Get your pot on the stove.

Melt the butter and add the olive oil and heat.

Then add the onions and mix.

When the onions soften slightly, add the potatoes, celery and carrots and mix.

Add the celery stalk and simmer for 3-4 minutes over medium heat.

Add 4 glasses of water and cook for 20-25 minutes on medium heat with the lid closed.

Pass the vegetables in the pot through the hand blender and add the remaining 3 glasses of water and orange juice.

Add salt and pepper and mix.

Add celery leaves and orange slices.

Close the lid and let it simmer for another 10 minutes.

Before serving, remove the orange slices and celery leaves from the colander and serve hot.
