KAFTEJI ( TUNISIA)



Kafteji is a traditional Tunisian dish made with fried vegetables. Typical vegetables used in the dish include eggplant, bell pepper, potatoes, tomatoes, zucchini and pumpkin. Vegetables are fried, chopped, then combined with (usually fried) eggs and seasonings.

The dish is usually sprinkled with parsley or coriander and then served alongside poultry or fish, although it can be eaten as is. Kafteji is also a popular Tunisian street food and is often served in a baguette.
