Bessara (Morocco)

Bessara is a Moroccan dish made with mashed peas or dried broad beans. While it can be prepared in the form of soup or porridge, thicker versions are often used as a dip. Mashed beans are typically flavored with olive oil, lemon juice, and garlic, and while the dish is often served with paprika and cumin on the side, Moroccan bread is almost a must.

Bessara is traditionally served for breakfast and is especially popular during the winter months.
