Skate in Brown Butter (Ireland)


Skate in brown butter is a traditional fish dish of Irish origin. The dish is usually made with a combination of skate (scythe), onions, bay leaves, parsley, lemon juice, butter, white wine vinegar, capers, and salt. The wings of the fish are placed in a pan with onions, bay leaves, parsley, water, lemon juice and salt.

The ingredients are cooked until the meat lifts easily from the cartilage. The butter is melted in a saucepan until it turns brown and then mixed with white wine vinegar, capers and salt. Skate is divided into separate portions and brown butter is drizzled on top.
