Macanese Garlic Prawns (China)
Macanese garlic prawns is a traditional dish from Macau. While there are several variations of the dish, it is usually made with a combination of shrimp, garlic, paprika, coriander, ginger, oil, salt, pepper, and rice wine.
The shrimps are washed, drained and a slit is made on their backs. The coriander, garlic, ginger and chili flakes are finely chopped, mixed with salt, pepper and oil, and this mixture is stuffed behind the shrimps. It is deep-fried on both sides, sprinkled with rice wine, boiled some more and served immediately, usually with lemon wedges on the side.
