Fava With Caviar (FUSION)
- 1,1 lbs dried broad beans
- 1 onion
- 1 carrot
- 2 stalks of celery
- 1 bunch of dill
- 4 glasses of water
- 1 teaspoon of salt
- 2 tablespoons of olive oil
For the top
- 1 teaspoon black caviar
- 1 red beetroot
- 3 leaves of fresh basil
- 1 grissini
For the fava, take all the ingredients in a saucepan and bring to a boil over low heat until it thickens. Puree it with the help of a blender and when it reaches a certain density, pass it through a strainer and put it on a tray.
After adjusting its thickness, apply olive oil on it and cover it with oiled paper and leave to cool.
After it cools down, cut it as you want with the help of a mold or a knife and transfer it to the serving plate.
After boiling the red beet, peel it and cut it into thin strips without tearing it, and place it on the fava in the form of a rose.
Arrange black caviar and fresh basil as desired and serve with grissini.
