Shirasu Don (Japan)


Shirasu don is a traditional Japanese dish originating from the Kanagawa region. It is a feature of Chigasaki, Enoshima Island and Kamakura. The dish is made with shirasu – baby sardines, sandfish and herring. The fish is eaten dried, boiled or raw with soy sauce.

Their texture is light and fluffy, while their flavor is slightly salty. For shirasu don, fresh and raw shirasu is simply placed over a bed of rice in a bowl. The dish is often enriched with seaweed, Japanese herbs and sliced ​​leeks, accompanied by soy sauce and tare.
