Boquerones Fritos (Spain)
Boquerones fritos is a traditional Spanish fish dish originating from Andalusia. The dish consists of deep fried anchovies and is usually made with a combination of fresh anchovies, olive oil, flour and salt. The cleaned anchovies are sprinkled with salt, covered with flour, and then fried in olive oil over medium heat until golden and crispy.
