Arroz a la Tumbada (Mexico)

                             


Arroz a la tumbada is a traditional Mexican dish originating from Veracruz. It is prepared in a thick clay pot called a cazuela and contains rice, seafood (fish fillet, shrimp, octopus, crab, and oyster), onions, garlic, butter, oil, fish stock, and tomatoes.

The combination is brought to a boil, then cooked until the liquid is absorbed. Once done (still a bit soupy like water), the dish is garnished with chopped parsley and served in the same cazuela (a shallow pot used for cooking).
