Rappie Pie (Canada)
This layered stew from Nova Scotia consists of layers of lard and shredded potatoes sprinkled with meat (ground beef, pork or chicken) or seafood (oysters, scallops). The cake is then baked until it turns golden brown.
Before serving, it is often garnished with butter or molasses. Pie is derived from the phrase pâte à la râpure, meaning grated pie, and refers to its main ingredient, grated potatoes.
