Parihuela (Peru)


This hearty and spicy seafood soup, whose flavors and ingredients are uniquely Peruvian, are from Peru's fishing communities; It is a dish to enjoy after a long day at sea and is now a popular dish on all coasts.

Parihuela recipes traditionally use firm-fleshed white fish as the main ingredient, such as cod or center cut of sea bass, crabs, and a variety of other fresh seafood, while its signature flavor comes from ají panca, a Peruvian variety of hot peppers. Even when used dry, it gives the dish a gorgeous floral bouquet.

Other spices include cumin, ginger, coriander and lemon juice, which makes parihuela particularly refreshing.
