Kartupeļu Pankūkas (Latvia)
Kartupeļu pankūkas are Latvian potato pancakes, a quick midweek meal that almost everyone knows how to prepare. They're made with a combination of grated potatoes, eggs, and flour flavored with just salt and pepper. Deep-fried until golden brown, kartupeļu pankūkas is traditionally served with sour cream and blueberry sauce.
Although these pancakes are seen as a cheap meal, they have recently started to appear on the menus of many coffee shops in the country.
