Iwakunizushi (Japan)


As the name suggests, Iwakunizushi is a variety of pressed sushi from Yamaguchi, Iwakuni City. It is made by layering sushi rice, lotus roots, shiitake mushrooms, and fine fried egg threads into large square-shaped wooden molds.

Traditionally, all materials are pressed onto the box until it is well compacted. Additionally, seafood is often placed on top of mackerel or pickled shrimp Iwakunizushi. Due to its colorful and attractive appearance, this variety of sushi is a staple dish served on special occasions and remains a favorite local specialty.
