Involtini di Pesce Spada (Italy)
Involtini di pesce spada (swordfish rolls) is one of the traditional Italian dishes mainly associated with Messina in the North-East corner of Sicily. Thin swordfish fillets are used to make the dish, stuffed with a combination of breadcrumbs, lemon zest, capers, garlic, fresh herbs, pine nuts, currants, and sometimes raisins or cheese.
The rolls are traditionally charcoal-fired but can also be grilled or pan-fried and are often paired with lemon juice or a lemon and olive oil-based salmoriglio sauce.
