Halaszlé (Hungary)

 



Halászlé, or fisherman's soup, is made with mixed river fish cooked in a broth heavily seasoned with chili peppers. The fish (mostly carp, catfish, sea bass or pike) is sourced locally from the Tisza and Danube rivers, and although halászlé may seem like a simple dish, this rich soup is traditionally prepared outside and cooked over an open fire.

Each region has its own version, but two of the most popular are Szeged halászlé, made with four kinds of fish, and Baja halászlé, which is mainly made with carp and served with a homemade pasta called gyufatészta.
