Crni Rizot (Croatia)


Typically served as a light lunch and a staple of many Dalmatian taverns and restaurants, crni rižot is a unique black risotto made with fresh squid or cuttlefish. Squid or cuttlefish ink give risotto its intimidating black color, while other seafood such as mussels, oysters, and other shellfish are commonly added to the dish.

Your teeth and lips will likely turn black as you eat. While its origin is still somewhat obscure, the dish is believed to have been invented when Croatia was under Venetian rule, and thus spread first in the Veneto (known as risotto nero di seppia) and then across the Mediterranean.
