Meatballs with Eggplant Puree ( TURKEY )

 


for Puree

  • 5 – 6 eggplants garden – roasted / 6 – 8 different type eggplants
  • 2 spoonful butter
  • 2 heaping tablespoons of flour
  • Salt
  • Black pepper
  • Muscat - grated
  • ½ – 1 cup old cheddar - grated 
  • 1 – 1.5 cups of milk

for Meatballs

  • 1,1 lbs mince
  • Salt
  • Black pepper
  • 1 egg
  • 1 cup breadcrumbs or panko
  • 2 pinches of dried thyme
  • 1 tablespoon of cumin
  • 1 tablespoon of ketchup
  • 1 – 2 tablespoons of butter

for Tomato Sauce

  • 2 tablespoons of olive oil
  • 1 onion
  • 4 cloves of garlic
  • 5-6 tomatoes
  • Salt
  • Black pepper
  • 1 pinch of granulated sugar

For the puree;

Make holes in the shells of your eggplants with the help of a knife.

Place them on a baking tray with baking paper and roast them in a preheated oven at 358 – 392 degrees for 40 – 50 minutes.

Make a vertical scratch on the belly of the roasted eggplants and remove the eggplant inside with the help of a spoon.

Take your pot on the stove and heat it.

Add the butter and melt it.

Add the flour to the melted butter and mix for a few turns.

Then add the roasted eggplants and beat with the help of a whisk until the fiber separates.

Add salt, pepper, nutmeg and grated old cheddar and continue whisking.

Take your ready aubergine in a glass baking dish and spread it.

Add milk to it and mix it lightly to allow it to absorb the milk.


For the meatballs;

Take the ground beef in a mixing bowl.

Add salt, pepper, egg, breadcrumbs or panko, cumin, dried thyme and ketchup and knead.

Make walnut-sized meatballs from your minced meat.

Take your pan on the stove and heat it.

Take the meatballs into your heated pan and cook them on all sides.

Add butter and mix well.


For the sauce;

Take your sauce pan on the stove and heat it.

Add olive oil and onion into the heated pan and saute.

Add the finely chopped garlic and sauté until the onions soften.

Add your diced tomatoes along with the juice.

Add salt, pepper and powdered sugar and mix.

Boil for 5-6 minutes.

Put your prepared sauce into the meatballs and cook for another 10 minutes.

To combine;

Spread the favorite you prepared on the serving plate.

Pour the meatballs with tomato sauce that you prepared on it.

Serve hot.
