Alcachofas Con Jamón (Spain)


Alcachofas con jamón (artichokes with ham) is a traditional Spanish dish often served as a tapa. The dish is usually made with a mixture of artichokes, olive oil, tomato juice, sugar, salt, white wine, jamón serrano, bay leaves and parsley.

The artichokes are sorted and thrown into cold water with parsley. Tomato juice and sugar are boiled in olive oil, then mixed with artichokes, white wine, ham and bay leaf. Cook until the artichokes are soft.

Before serving, this tapa is salted, sprinkled with olive oil and chopped parsley.
