Tacacho (Peru)

 


Tacacho is a traditional Peruvian dish typically served for breakfast. It comes from the Amazonas region, where the natives boil or grill plantains, peel them and then crush them in a large wooden pestle. Crushed, plantains are combined with lard, salt and small pieces of pork.

The combination is then rolled into a ball and served with chorizo, a variety of freshly harvested local vegetables, and salted cured pork known as cecina. There is also an Ecuadorian version of the tacacho known as bolón de verde.
