Stuffed yellow peppers with vegetables (Vegan - Vegetarian - Diet)


  • 4 yellow bell peppers
For internal stuffing
  • Half a teaspoon of olive oil
  • 1 onion
  • 1 zucchini
  • ½ cup dried tomatoes
  • Half a cup of boiled green lentils
  • Salt
  • Black pepper
  • 3 spring onions
  • 4~5 sprigs of basil
Wash the bell peppers. Cut it in half lengthwise and remove the seeds. To prepare the stuffing, heat the olive oil. Fry the chopped onion until it turns pink. Add the diced zucchini and sun-dried tomatoes and saute. When the vegetables begin to soften, add the boiled lentils. Season with salt and pepper. Add the finely chopped greens before removing from the stove. Fill your stuffing into the peppers and put them in a large pot. Add little water and cook until the peppers are soft. Serve hot.
