Serviettenknödel (Germany)


Serviettenknödel is German ravioli, or Semmelknödel, which derives their name from the way they are traditionally cooked: rolled up tightly and steamed in a cloth napkin.

They are typically made with stale bread, baguettes or bagels, milk, eggs, lard, and chunks of softened onions. The bread mix is ​​often flavored with salt and pepper and often fortified with freshly chopped parsley and nutmeg for extra flavor.

Once made, the log dough is usually cut into thick slices and either eaten as is or pan-fried until nicely browned. These delicious ravioli are a typical accompaniment to various roast meat delicacies, roladen, gravy, mushroom sauces and lentils, and are traditionally prepared for special occasions such as Christmas dinners and weddings.

Food is nowadays more commonly cooked in plastic wrap and aluminum foil rather than kitchen towels or napkins. Serviettenknödel has also been a part of other European cuisines, including Austrian and Czech cuisines.
