Omelet With Vegetable & Oatmeal



  • 2 eggs
  • 2 tablespoons of cottage cheese
  • 2 tablespoons oatmeal (ground)
  • 1 handful of frozen or fresh spinach or basil
  • 1-2 red peppers
  • 5-6 mushrooms
  • chopped dill
  • Sesame / nigella seeds / flax seeds and any spices you want
  • 1 tablespoon of olive oil

Beat the eggs in a deep bowl with a fork until homogeneous.
Add curd cheese, ground oatmeal, spinach, dill and spices into the scrambled eggs and whisk again.
If you wish, you can also add black cumin, sesame or flax seeds.

Then saute your red peppers and mushrooms in a pan with 1 tablespoon of olive oil, add the egg mixture and cook.
