Lasagne al Pesto e Patate (Italy)

Lasagna al pesto e patate is a traditional Italian dish of Ligurian origin. This lasagna casserole is usually made with a mixture of lasagna pasta, potatoes, pesto, butter, flour, milk, basil, grated Parmesan, salt, and pepper. Potatoes are boiled until soft, drained, cooled and thinly sliced.

The mixture of flour, butter, milk, salt and pepper is turned into bechamel sauce and mixed with grated parmesan. Spread the sauce over the bottom of an ovenproof dish, top with a layer of potatoes, another layer of sauce, and then dot with the remaining pesto and lasagna sheets.

The process is repeated and the final layer should be sauce. Lasagna al pesto e patate is cooked until golden and bubbling. The dish is served hot and is often sprinkled with basil.
