Khao Lam (Thailand) - Dessert
Khao lam or kingan is a unique Thai dessert consisting of steamed white or red sweet glutinous rice in bamboo tubes. The simplest, original version included rice mixed with just water and salt, but more elaborate interpretations today include the addition of grated coconut, sugar, coconut milk, and red beans.
Rice is mixed with the desired materials and placed in specially prepared bamboo sticks. Coconut milk is added to the rice, and then the stick is closed and carefully placed on an iron over hot coals. This unusual slow-cooking process turns rice into a sweet and rich dish like pudding or rice pudding.
Modern versions come in a variety of different flavors, such as taro, durian, Thai pudding, or corn, often tucked into the middle of the roll. Khao lam is considered a filler and is often sold by street vendors at food fairs, around temples, and in numerous Asian markets.
Khao lam, although an original Thai dish, can also be found in Cambodia and Laos.
