Jiaozi (China)
Consisting of a thinly rolled dough piece with a meat or vegetable filling, these dumplings known as jiaozi are one of the most popular and widely eaten dishes in China and East Asia.
They can be served as a starter, side dish, or always as a main course with a soy sauce-based dipping sauce, but traditionally, jiaozi is always eaten for Chinese New Year. Depending on how they're cooked, jiaozi can be classified into three categories: boiled, steamed, and stir-fried, but when it comes to folding techniques, there are many, and the most popular is known as pinched-edge folding. This results in the crescent-shaped jiaozi, the most popular shape in China.
Well-known variations of jiaozin include the smaller variety of gaau ji with a thin, translucent wrap, stir-fried guotie, and Japanese gyoza.
