Torisashi (Japan)
Torisashi is raw chicken sashimi sometimes made by slicing
chicken meat that is lightly fried on the outside, but remains pink on the
inside. The name of the dish is a combination of the two words, tori meaning
bird or chicken, while sashi means sashimi.
In the city of Kagoshima, torisashi has a cult-like
following and is usually served with soy sauce flavored with ground ginger or
mirin. In other parts of the country, these pink chicken slices are accompanied
by sesame, salt, scallions, or wasabi.
Many parts of the chicken, such as the heart, gizzard,
breast, and liver, are used for torisashi. Chickens are slaughtered in a
specific way and immediately cooled to prevent salmonella-causing bacteria in
the meat.
