Tacos de Adobada (Mexico)
Tacos de adobada is a Mexican
dish that is similar to, but not identical to, tacos al pastor. Both tacos al
pastor and tacos de adobada refer to pork marinated in a combination of spices,
chili peppers, and vinegar. For tacos al pastor, pork is cooked on a vertical
skewer called a trompo, while for tacos de adobada, pork is usually cooked on a
grill or stovetop.
However, in some places, such as
Baja California, people refer to al pastor as carne adobada. Adobada is usually
made from pork shoulder, either thinly sliced when grilled or cut into chunks
when fried. Tacos are usually topped with chopped onions, radishes, cilantro,
and lime juice.
