Hackepeter (Germany)


Called hackepeter or mett, this unusual German specialty consists of raw ground pork that should be eaten as is. Raw meat is typically flavored with salt and pepper, but can be enhanced with crushed cumin, marjoram, nutmeg, garlic or onion for added flavor.

When raw onions are added to the basic mett, the resulting mixture is called zwiebelmett, while the addition of onions and marjoram is called thüringer mett. In Germany, seasoned raw ground pork is typically sprinkled on bread rolls (mettbrötchen) or slices of bread, and raw onion rings are often sprinkled on top.
