Soldaditos de Pavía (Spain)

 


Soldaditos de Pavía is a traditional Spanish dish that forms the basis of Madrid's tapas bars, but is also often found in Andalusia. The dish consists of deep fried cod strips served with a strip of roasted red pepper wrapped around them.

Before frying, cod is typically marinated in a mixture of allspice and lemon juice. The name of the dish means soldiers of Pavía, which refers to the orange-red uniforms worn by the dish's regiment of Pavía Hussars.
