Onomichi Ramen (Japan)

Onomichi is a style of ramen consisting of soy sauce-based broth occasionally flavored with pork, seafood from the Seto Inland Sea, chicken, or dashi. The broth is served hot with medium-thick flat wheat noodles and lots of seabura – lard.

Tops can vary, but they typically include scallions, roast pork, and bamboo shoots. Although it first appeared in the late 1940s, Onomichi ramen became popular in the 1990s. It still remains a local specialty of Onomichi.
