Lemon Barley Water (Australia)

Lemon barley water is a non-alcoholic thirst-quenching beverage that is also used as a health tonic. The drink is made by slowly boiling barley, sometimes with lemon zest. The liquid is then sieved and combined with lemon juice, honey, or sugar. The combination is then allowed to cool. Lemon barley water is traditionally drunk as a refreshing summer drink and can be served with ice or lemon wedges.
