Chingri Malai Curry (India)
Chingri malai curry is a traditional Indian curry from the Bengal region. It is made from coconut milk and shrimp flavored with garam masala spices and fried in oil or mustard oil with onions, chili peppers, garlic-ginger paste, and turmeric. If desired, paprika powder, cinnamon, sugar, and cardamom can be added to further enhance the flavors. The dish is cooked until the sauce is thick and creamy and then served hot, usually with rice on the side. It is believed that this dish was brought to Bengali cuisine by Malaysian traders.
