Blomkålsuppe (Norway)




 Blomkålsuppe  is a traditional Norwegian cauliflower soup. Although there are many varieties, the soup is usually made with a mixture of cauliflower florets, broth, egg yolk, salt, white pepper, cream, butter, onion, flour, and nutmeg. Cauliflower is boiled in salted water and half separated into florets and set aside. The rest is cooked until it reaches a porridge consistency and mixed with a little water until the mixture turns into a smooth sauce. Onions are fried in butter and mixed with flour, broth, and cauliflower sauce. The soup is boiled by stirring, and a mixture of egg yolk, cream, coconut, and white pepper is added to the soup, stirring constantly. The flowers are put in the pot, the soup is boiled a little more and served while it is hot.
