Satay Bee Hoon (Singapore)

 



This peddler-style Singapore dish got its name because of the similarity between the peanut sauce used in it and the satay peanut sauce. Satay bee hoon consists of blanched bee hoon noodles (rice noodles) served with a sweet, salty, and spicy peanut sauce. A roasted and ground peanut-based paste is combined with a mixture of ingredients such as dried chili, spices, garlic, shallots, lemongrass, galangal, tamarind juice, and shrimp paste, and the mixture is then boiled to make the sauce. Typical accompaniments to this dish include water spinach (kang kong), fried tofu (tau pok), shrimp, mussels, cuttlefish, and pork slices. The origin of the dish is unknown, but the Satay Bee Hoon may have been brought to Singapore by Teochew immigrants.
